Ingredients

Gingerbread Blondies

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 ½ tsp ground ginger

  • 1 tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp cloves

  • ½ cup unsalted butter, melted

  • ¾ cup brown sugar, packed

  • ¼ cup molasses

  • 1 large egg

  • 1 tsp vanilla extract

Vanilla Glaze

  • 1 cup powdered sugar

  • 1–2 tbsp milk

  • ½ tsp vanilla extract


Instructions

1. Prep

  1. Preheat oven to 350°F.

  2. Line an 8×8 baking pan with parchment paper or lightly grease it.


2. Mix the Batter

  1. In a medium bowl, whisk together flour, baking powder, salt, ginger, cinnamon, nutmeg, and cloves.

  2. In a separate large bowl, stir together melted butter, brown sugar, and molasses until smooth.

  3. Add the egg and vanilla extract; mix well.

  4. Fold dry ingredients into wet ingredients until just combined — do not overmix.


3. Bake

  1. Spread batter evenly into the prepared pan.

  2. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out mostly clean.

  3. Let blondies cool completely in the pan.


4. Make the Glaze

  1. Whisk powdered sugar, milk, and vanilla until smooth and pourable.

  2. Drizzle glaze over cooled blondies.


5. Slice & Serve

  1. Slice into squares or rectangles once glaze has set.

  2. Serve at room temperature or slightly warmed.


Holiday Variations

  • Add white chocolate chips to the batter

  • Sprinkle crushed gingersnaps on top before baking

  • Add orange zest to the glaze for a citrus twist

  • Dust with powdered sugar instead of glazing for a rustic look


Storage

  • Store covered at room temperature for 3–4 days

  • Refrigerate up to 6 days
